First of all… I love to eat salads.
Here lately, I have embraced the Mediterranean diet and have eaten a lot lighter and I find myself craving salads. I am always on the lookout for a good salad recipe using different fruits and vegetables. I gave you a recipe a few months back for a Roasted Chicken Salad with Strawberry Vinaigrette. While I do have a few body goals in mind, living a healthier lifestyle is more important to me! I want to share recipes with you that will fit into a healthy lifestyle. As much as we are serious foodies over here, we don’t over indulge. Most of the time over here, we are pretty good minus my love for sweets!!
As a result of continuing with my healthy recipes, today I wanted to share with you another simple Summer salad that I have loved lately. Spinach and feta cheese are two of my absolute favorite combos for a salad. I also added a few other things just to give me some of the nutrients that I need.
I don’t really like to take a lot of meds, so getting my nutrients from food is what I like to do. This salad is rich in iron because I’m using spinach and sunflower seeds.
In addition to the salad, I also made a simple lemon Greek dressing. I have made a recipe card for you!
You simply just mix all the ingredients together and enjoy! I really hope that you try this and let me know what you think!
