Quick and Easy Chicken Pasta Bake.

Ok so I know this is not my normal clean food post, but I wanted to share this quick, easy and good looking recipe.

I knew this would be a busy week for the family, so while I was meal planning, I was thinking of something quick and easy I could make for the girls. I don’t cook a lot of pasta over here, but my girls love it and pasta every once in a while for a very active 16 and 13 year olds is ok lol!!

Anyway I pulled out my phone and scoured the internet for easy meals and all I kept seeing were recipes for chicken and pasta. So I thought I would use what I had and make it work.

This pasta literally contains ingredients you probably already have in your pantry and fridge. It’s literally chicken breast, pasta, marinara sauce, a little heavy cream, parmesan cheese, mozzarella cheese or whatever you have on hand. Aside from salt, pepper, parsley and garlic powder, that is it!!

Once you roast your chicken breast and boil and drain your noodles, the rest is literally throw everything in the pot, top with cheese and bake in the oven. 20 minutes total and it looked so good!! If you have gluten intolerance (like myself) or Celiac disease you can easily swap the pasta for a gluten free one.

You all know I just don’t eat much pasta, if any. However, I don’t believe in depriving my family, just because we mostly eat clean. For the most part they do to, but some days, these are their fave meals and I’m here for it.

Listen I love making my spaghetti sauce from scratch, but today, she didn’t have the time and this semi-homemade dinner hit!! If you’re interested in the recipe, I’ve made a little card below for you!

Pair this with some garlic bread and a green salad and you’ve just one with this one!

Quick and Easy Chicken Pasta Bake

  • 4 Chicken breast
  • Olive oil (extra virgin)
  • Kosher salt
  • Black pepper
  • Garlic powder
  • 3 tsp parsley
  • 1 box Cavatappi or Rigatoni pasta (or whatever pasta you'd like)
  • 2 jars Marinara sauce (use whatever kind you would like)
  • 1 bag Mozzarella cheese
  • 1/2 cup Parmesan reggiano (freshly grated )
  1. Preheat over to 350

    Season chicken on both sides with salt, pepper, garlic powder and olive oil and bake until done

    Remove chicken from oven and let rest for about 10 minutes then cut it up into slices or cubes, whichever you prefer. Set aside.

    Cook pasta according to package directions. Make sure you add a little salt and olive oil to your water.

    Once your pasta is done, drain and put back in the pot or use a big pot if you already hadn’t. Make sure that your pot is oven safe.

    Add the remaining ingredients except the mozzarella and cheese and stir until combined.

    Add the mozzarella cheese and parsley on top and bake in the oven for about   minutes or until the cheese is completely melted.

    Remove from the oven and let sit for 5-10 minutes ans then enjoy!

  • Feel free to use a gluten free pasta if you have intolerant issues or have Celiac disease.
  • Make sure that you choose a gluten free marinara if you are going the gluten free route.
