Roasted Chicken & Berry Salad with Strawberry Vinaigrette  

Happy Tuesday Friends !

I am here today to share one of my all time favorite salad recipes with you. Roasted Chicken & Berry Salad with Strawberry Vinaigrette!

Ok now back to the post!! So I’m sure where you live, it’s getting warm outside and I don’t know about you, but I have my mind focused on getting “Summertime Fine” around these parts ! Not only have I not been eating breads and sweets (aside from the piece of cake I had at Jordan’s party Saturday LOL) I have been consistent with counting my calories ! I eat clean, I just have those few weaknesses, so I have had to find alternative recipes that are clean, not a lot of calories and very little to no sugar. Sugar is in SO many things that we eat !! 

Roasted Chicken & Berry Salad with Strawberry Vinaigrette

We eat salads quite a bit around The Patterson House and I want them to be good and not boring. Long gone are the days when our parents made salad with iceberg, tomatoes and cucumbers. They still have their place, but there are so many creative and delicious ways to eat a salad and I have one for you today! I went to a luncheon once and a berry salad was served, but it had blue cheese, I like blue cheese, but I like feta cheese better, so that is what I used. This salad is so easy to make! Here are the items that you’ll need for the salad.

  • Romaine lettuce
  • Spring mix or baby spinach
  • Strawberries
  • Blueberries
  • Feta cheese
  • Roasted Chicken Breast (season with kosher salt, cracked black pepper and good olive oil, roast on 350 for 45 minutes to 1 hour, cover and let them sit for 10 minutes before cutting. I also use smoked paprika to season the chicken YUM!!)

Once you have roasted your chicken, washed and cut your fruit, everything else is so easy. Just assemble and wait for the dressing !

Roasted Chicken & Berry Salad with Strawberry Vinaigrette

Here is my thing about dressing, I hate store-bought dressing. I really do. It’s loaded with things we don’t need ! So I make my own and let me tell you, once you start making it, you will NEVER want store-bought dressing again !! I promise you! Ranch is normally my go to, but since we are eating lighter, I made a Strawberry Lime Vinaigrette and it is YUMMY !! Here is what you’ll need for that 

  • 1/2 cup strawberries
  • 2 Tbls olive oil
  • 1/2 cup cold water
  • 1/4 cup honey 
  • 1/4 red wine vinegar
  • 1 tsp kosher salt
  • 1 tsp poppy seeds
  • The juice of 1 lime

Roasted Chicken & Berry Salad with Strawberry Vinaigrette

Simply throw everything into the blender or I used my Nutri bullet, Blend until all the ingredients are smooth and there you have it ! Easy Peasy, but also delicious !!
