First of all…  I love to eat salads.

Lighter Fare Spinach and Feta Salad

Here lately, I have embraced the Mediterranean diet and have eaten a lot lighter and I find myself craving salads. I am always on the lookout for a good salad recipe using different fruits and vegetables. I gave you a recipe a few months back for a Roasted Chicken Salad with Strawberry Vinaigrette. While I do have a few body goals in mind, living a healthier lifestyle is more important to me! I want to share recipes with you that will fit into a healthy lifestyle. As much as we are serious foodies over here, we don’t over indulge. Most of the time over here, we are pretty good minus my love for sweets!!

Lighter Fare Spinach and Feta Salad

As a result of continuing with my healthy recipes, today I wanted to share with you another simple Summer salad that I have loved lately. Spinach and feta cheese are two of my absolute favorite combos for a salad. I also added a few other things just to give me some of the nutrients that I need.

Lighter Fare Spinach and Feta Salad

I don’t really like to take a lot of meds, so getting my nutrients from food is what I like to do. This salad is rich in iron because I’m using spinach and sunflower seeds. 

In addition to the salad, I also made a simple lemon Greek dressing. I have made a recipe card for you!

  • Spinach & Feta Cheese Salad w/ Lemon Greek Dressing

    1. Spinach
    2. Sunflower Seeds
    3. Strawberries and Blueberries – you can use whatever fruit you like
    4. Feta Cheese
    5. Pecans or whatever type of nut you like
    6. For The Dressing
    7. 1/2 cup extra virgin olive oil
    8. 1/2 cup apple cider vinegar
    9. 1 medium lemon juice only
    10. 1 1/2 tsp garlic powder
    11. 1 1/2 tsp dried oregano
    12. 1 1/2 tsp dried basil
    13. 1 tsp dijon mustard
    14. 1 tsp parsley
    15. 1 tsp onion powder
    16. 1 tsp salt
    17. 1 tsp pepper
    1. Mix all the ingredients together and enjoy!
